What's this... a Fall recipe that doesn't involve pumpkin?! Shocking I know! I have a bit of a complicated relationship with pumpkin (in that I love it desperately, but it makes me sick) and so I decided to create a new muffin with apples and pecans instead. Still very Fall-esk.
This recipe is based off the basics from my Banana, Date & Cinnamon Muffins.
I made these muffins with a streusel topping though, so they aren't suitable as breakfast muffins this way, but otherwise are relatively healthy again! And sans heavily processed ingredients.
I chopped my pecans up really quite finely because of little toddler indulgence, but you can keep them quite chunky if you're only serving adults.
The muffins taste very Autumnal with the pecan and cinnamon and the apple keeps them moist and sweet.
