This is one of those gluten free cakes that you'd have no idea is gluten free because it is so rich and decadent that you would never suspect it is lacking a thing.
One of our friends made it for me (well us really, but lets be real, if someone brings a gluten free cake into my house, it is for me) and it was love at first bite. I have made it twice myself and just know its going to become my go-to cake for special occasions!
It is a little more involved than your average butter cake, but it also tastes so much better too, so is totally worth the extra effort.
Without further ado, here is the recipe, which is an adaptation from Cakelets and Doilies (who adapted a Donna Hay recipe). And when someone adapts this recipe it is surely going to be an entirely new cake by then!!!
This cake feels like a special regular occasion cake.
It feels like the type of cake that you are going to remember who you shared it with, and what you were celebrating.
Whether you are celebrating catching up with old school friends who you haven't seen for some time; whether you are celebrating the reunion playdate of a boyfriend and girlfriend who were separated for a long summer; or whether you are a couple of gluten intolerants celebrating some really good gluten free cake; its the kind of cake that you want to save for times you don't want to forget.
