Ever since Pete and I started living together all those many years ago (not that many really but my brain is functioning at a slower rate than normal to figure it out this morning!), weekend breakfasts have been his thing. I've always been the weeknight chef, we always cook together on the weekend nights, but either Saturday or Sunday morning, Pete does breakfast. And boy does he do breakfast.
Crepes, pancakes, waffles, french toast, cooked breakfast, you name it, he makes it! But throw into the mix my gluten intolerance, and Pete has had some challenges to his breakfast repertoire. His gluten free french toast with poached pears is out of this world, and I can't go past his homemade beans, but, sorry dear, he is yet to master the gluten free pancake.
Petes' desire to throw in tonnes of white flour and white sugar to have the fluffy pancakes he's been missing in our gluten-free kitchen meant me taking the reigns of pancake making. I played around with buckwheat flour for a while and they were okaaaaay, but nothing to write home about.
After making the worlds best gluten free Lemon & Ricotta Cake, I had a thought to pretty much turn that into pancakes. Why not!?
I love the idea of having whisked eggs into recipes that don't normally call for them, and in the gluten free world, they are an enormous help for adding fluffiness. It does mean that these aren't your standard pancakes that takes 5 minutes to whip up, but to me, they are totally worth the extra effort. They are quite simply, the best tasting pancakes I've ever had. Gluten or no gluten.
Honey butter is a firm favourite of mine. I've got an entire post about Honey coming up this week, but for now, will just say that honey, butter and a touch of icing sugar makes for a delicious pancake topping!
Using a whole tub of ricotta seemed kind of extreme, but what the heck, these pancakes were amazing because of it! The ricotta gives them a velvety richness that is perfectly balanced by the fluffy egg whites. They quite simply are just the best pancakes I've ever had. Have I mentioned that already?
Other than these pancakes being entirely exciting, I have some pretty exciting news to share tomorrow! Its been a really long time keeping to myself, so I can't wait to share what's been going on that has us pretty excited!!!!!
